♥ Ben and Allie's Wedding ♥

The night before Ben and Allie got married our family had dinner with Allie's family! We went to Goodwood Barbecue Co. The food was good.

Ben didn't know our Grandma flew out! It was a surprise!
Ashton and Katie came to the reception! It was fun to see them!

The day after the wedding we took my grandma to Temple Square. She really enjoyed seeing everything even though she is not a member!
Outside the conference center...it was closed for tours
Anthon and I had a lot of fun on our 4 day weekend! I am glad I was able to see a lot of my family and spend time with them. It was sad when it came to an end.

Sweet and Sour Chicken

Last night we had our neighbors over for dinner. We made sweet and sour chicken. It was really yummy so I thought I would share the recipe. Anthon got this recipe from a Chinese lady on his mission. He has been wanting to make it for a while so we finally did!

Chicken Batter
Ingredients
2 lbs boneless chicken breast (about 4 small or 3 large), cut into 1 inch pieces
3 TBS flour
3 TBS cornstarch
1 tsp salt
1 tsp baking powder
2 eggs, beaten
1 TBS water
Oil for deep frying (about 1-1/2 inches deep or more)

Directions
Heat oil over medium high heat.
Mix together the flour, cornstarch, salt and baking powder.
Add beaten eggs and water to make a batter.
Add cut up chicken to batter. Mix well.
Fry chicken pieces in several batches careful not to crowd the fryer (add chicken to the oil one piece at a time so they don't stick together).
Fry the chicken until lightly golden (about 6 to 7 minutes per batch).
Drain on paper towel and transfer to serving platter.

Sweet and Sour Sauce
Ingredients
1 can of pineapple chunks in its own juice
1/4 cup ketchup
1/4 cup brown sugar
3 TBS vinegar
dash of soy sauce (about 1/2 teaspoon)
1 heaping TBS cornstarch mixed with about 1 TBS water

Directions
Drain pineapple chunk and place all the juice into a small sauce pan.
Add the remaining ingredients except cornstarch and water.
Stir cornstarch and water. Add to boiling sauce while stirring constantly with a fork or a whisk until thickened and bubbly.
Serve pineapple chunks on the side.

Jan-Present

So far this year we haven't really done anything. We mostly go to work and school. When we are at home we are usually doing homework or taking a break to watch an episode of whatever we are watching on DVD at the time. I can't wait for spring to come so that we can get outside and do something fun!

Christmas

For Christmas we went to Arizona! We had a lot of fun hanging out with Anthon's family! I can't wait to go back again!
