Fun Filled Week

This past week my family came to visit Anthon and I here in Rexburg! We had lots of fun! I wish that they didn't have to leave :(

On Monday we showed them around the school a little bit. Katie helped me and Anthon make some homemade pizza for dinner. Then we went to G's Dairy Delights to get some ice cream. Anthon and I had never been there before. They had some very good ice cream and it wasn't expensive at all. My dad loved it and wanted to go back every night but we were only able to go one other time. Anthon even ate it even though he isn't really supposed to.

On Tuesday we went down to Idaho Falls. We walked around the temple there and also drove by the apartment my parents lived in when they lived there a long time ago. We went to get some ice cream at G's again for dessert.

On Wednesday we just relaxed in our apartment. I made some Oreo Truffles and they were very yummy. For dinner we went to Frontier Pies, mine and Anthon's favorite place to eat out around here. We ordered a Banana Cream Pie to take home! Delicious!

Happy Birthday Anthon!

Today was Anthon's 23rd birthday! I made him a birthday cake all from scratch! We had some friends and my brother over to help us eat it. Everyone liked it a lot! It was fun and I enjoyed making and decorating the cake! I love you honey! Happy Birthday!

This is the cake recipe I used:
Hershey's "Perfectly Chocolate" Chocolate Cake

And this is the recipe I used for the frosting:
Creamy Milk Chocolate Frosting

Ingredients:
10 ounces milk chocolate, chopped (I used Hershey's)
1 tablespoon corn syrup
1 pinch of salt
1/2 cup heavy cream, boiling
1/2 cup powdered sugar
1 stick unsalted butter, cut into 8 pieces and chilled

Directions:
1. Place the chocolate, corn syrup, and salt in a food processor. With the machine running, gradually pour the boiling cream through the feed tube and process for 1 minute.

2. Add the powdered sugar and continue to process until combined, about 30 seconds. With the machine running, add the butter through the feed tube, one piece at a time, and process until smooth, about 30 seconds.

3. Transfer the frosting to a medium bowl and let cool at room temperature, stirring frequently, until thick, about 1 hour.

Makes about 2 cups (enough for one 9x13 or 12 cupcakes).

The final texture of this frosting is looser than others, making it perfect for sheet cakes and cupcakes, but not good for layer cakes. (I used it for a two-layered cake and it worked fine although I needed to make 1 1/2 of the recipe to have enough for it.)

Warm Toasted Marshmallow S'more Bars

I saw these flipping through a magazine I got from taking a survey I got in an e-mail from Betty Crocker. They looked so good that I had to make them. They were super easy to make and tasted really yummy! Even Anthon liked them and he doesn't like marshmallows!

Warm Toasted Marshmallow S'more Bars

Ingredients:
1 pouch Betty Crocker sugar cookie mix
1 cup graham cracker crumbs
1 cup butter, melted
3 cups milk chocolate chips
4 1/2 cups miniature marshmallows

Directions:
1. Heat oven to 375 degrees F. In large bowl, stir together cookie mix and crumbs. Stir in melted butter until soft dough forms. Press into 13x9 inch pan.

2. Bake 18 to 20 minutes or until set. Immediately sprinkle chocolate chips over crust. Let stand 3 to 5 minutes until chocolate begins to melt. Spread chocolate evenly over crust.

3. Set oven to broil. Sprinkle marshmallows over melted chocolate. Broil with top 4 to 5 inches from heat for 20 to 30 seconds or until marshmallows are toasted. (Watch Closely; marshmallows will brown quickly.) Cool 10 minutes. For bars, cut into 6 rows by 4 rows. Serve warm. Store any remaing bars tightly covered.

To reheat, place individual bars on a microwaveable plate. Microwave uncovered on high about 15 seconds or until warm. (The marshmallows are harder to eat when you reheat them)
